 Literally: a rolling stone gathers no moss.

In the forest, stones which have not moved for a long time are usually covered with green moss - this is not the case for a stone rolling in the rough waters of a torrent.

So, this expression means that an adventurous person, who spends all his time traveling and changing jobs, can not accumulate goods or wealth as a stable, persevering and experienced person.
